Healthy Chicken Nuggets Recipe



Makes 7 servings as a meal or 14 snack-sized portions
Gluten free and dairy free

Step 1

1 c. almond meal or 96 almonds

Step 2

1 tsp. poultry seasoning
½ tsp. salt

Step 3

1 lb. chicken breasts
1 egg, beaten


  1.  Preheat oven to 350 degrees. Grind almonds if using whole.
  2.  Mix ingredients with almond meal.
  3.  Cut chicken into 28 nuggets, dip in beaten egg, and coat with almond meal.
  4.  Bake nuggets on an oiled cooking sheet for 20-30 minutes, turning nuggets once.
