Crustless Spinach Quiche Recipe

Makes 6 servings as a meal or 12 snack-sized portions | Gluten free

Step 1

1 T. butter
1 T. olive oil
1 large onion
1 red pepper, diced

Step 2

1 (10 ounce) bag of frozen spinach (thaw and squeeze to remove excess water) OR 1 package of fresh spinach OR 1 cup of broccoli chopped finely

Step 3

6 eggs, beaten
1 c. cottage cheese
2 oz. mozzarella cheese
2 T. heavy cream
½ tsp. salt
¼ tsp. pepper

Step 4

½ c. cheddar cheese, grated

Directions:

  1. Preheat oven to 350 degrees. Dice onion and red pepper and sauté in butter and olive oil until softened.
  2. Add spinach and continue to sauté until wilted.
  3. Beat eggs together in bowl. Add cooked veggies to egg mixture.
  4. Add cottage cheese, cream and mozzarella cheese. Add salt, pepper and any spice of choice.
  5. Pour in 9” pan and bake in a 350 degree oven for 40–45 minutes.
  6. Top with ½ c. cheddar cheese.
