Artichoke-Caper-Lemon Tuna Salad Recipe

Makes 4 servings | Gluten free and dairy free

Step 1

24 oz. can of tuna, packed in water
3 T. cold-pressed mayonnaise
2 T. capers
½ c. celery, finely diced
¼ c. red onion or small green onion, finely chopped
1/8 c. parsley, finely chopped

Step 2

8 c. romaine or spinach
½ c. artichoke hearts, chopped
2 c. roma tomatoes, sliced
2 c. cucumbers, sliced

Step 3

2 T. olive oil
Juice from ½ lemon
Freshly ground pepper to taste

Directions:

  1. Combine ingredients from step 1 in a medium bowl.
  2. Divide ingredients in step 2 among 4 plates and top with tuna mixture.
  3. Shake ingredients from step 3 in a sealed jar and drizzle evenly over the four plates.
