Pot Roast Recipe

Approximately 8 servings as a meal | Gluten free and dairy free

Step 1

2 T. olive oil
4-5 lb. pot roast

Step 2

5 potatoes, thinly sliced
4 carrots, thinly sliced
2 onions, thinly sliced
1 tsp. pepper
1 tsp. sea salt
1 tsp. dried dill and rosemary

Step 3

1 c. water
Roast

Directions:

  1. In a saucepan, brown roast on all sides in olive oil.
  2. Put vegetables in the bottom of a slow cooker. Stir in seasonings.
  3. Add the roast to the slow cooker. Pour in water.
  4. Cover and cook on low for 10-12 hours.
